to ring in the New Year and New You
First of all, Happy New Year! I hope this year will be a great and happy one for everyone.
To ring in the New Year (and New You, as many of us make a New Year's resolution to get healthier), here's a colorful and tasty dish that will have you saying, "Hey, tofu doesn't suck after all."
(Measurements on the veggies and spices are approximate. Totally tailor this to your taste. Omit, substitute or add veggies and spices to your liking.)
1 14-16 oz package extra firm tofu, drained (I use non-GMO tofu)--do this first, because it takes some time. By the time you're done prepping your ingredients, it should be good to go. (See below for how to do it).
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/4 cup diced onion
1 diced and seeded tomato
1 generous handful fresh spinach, chopped finely
1 handful fresh cilantro, chopped finely
1 tsp each: yellow curry powder, garlic powder, onion powder
Few drops Bragg Liquid Aminos, or dash of sea salt if needed
Dash of pepper
Low sodium vegetable broth for sauteeing veggies

To drain tofu: Drain the liquid from the tofu container. Either use a tofu press as directed, or if you don't have this fancy contraption no worries. Just wrap the tofu in paper towels, set in a dish to catch the water, and lay something heavy on top like a heavy saucepan or dishes.

Pour a little veggie broth (maybe like 1/4-1/2 cup) into a skillet. Add the peppers and onions and saute on medium heat till onions are translucent and broth has evaporated. Add broth as needed to prevent burning.

While the peppers and onions are cooking, crumble your tofu with your hands.
When the peppers and onions are done add the tofu and spices.

Add a splash of veggie broth as needed so things don't stick and burn. Keep mixing and you will see the tofu transform into a beautiful yellow color like scrambled eggs from the yellow curry powder and veggie broth.
Since greens don't take long to cook they get added last, so add the spinach and cilantro now, along with about half the tomatoes.

Add a few drops of Bragg Liquid Aminos or a dash of sea salt now if you wish, and adjust the spices as needed.
Serve with some of the diced tomatoes on top.

Rest assured you won't look at tofu the same again. It's bland and boring with an odd texture by itself...but takes on the tastes of whatever it is cooked with and is surprisingly versatile. Take a moment to look at your colorful creation because you are awesome...then dig in!
