Taco Bar Night

Leftover Friday:  Taco Bar Night!
re-purpose leftovers and "stuff" yourself with plant-based tacos!


Want a fun way to put together a meal quickly using some stuff you have leftover from the week?  Try a taco bar--in your kitchen.

I had leftover quinoa-lentil salad, chopped bell peppers and onions, and spinach left over from this past week, so they got used in these hearty tacos.

You can use whatever you want--get creative.  Make it colorful, nutritious and fun.




Ingredients for my tacos tonight:

Pico de gallo (I made fresh because this stuff doesn't last long with me around, it gets eaten pretty quickly--used the leftover onions in this)


1/2 of a 16oz package of frozen corn, rinsed in cool water, drained, and roasted for about 10 minutes at 450F in the oven

Chopped green and red bell peppers

Handful of spinach, chopped finely

Black bean dip and medium hot salsa (I used the Wegmans brand for each), each portions mixed together

Leftover quinoa-lentil salad, jazzed up with some chipotle pepper powder, cumin and chipotle hot sauce
(If you don't have this salad, just use beans or lentils...get creative!)

Corn tortillas (I was able to find some very natural ones with very few ingredients at Wegmans, these are frozen and need a little defrosting first)--baked in a 400F oven for about 10-15 minutes till starting to crisp

Make a taco!  Simple as that.  Line up all your ingredients and go to town!

Maybe you'll end up with a gargantuan taco like mine:

Tacos can be made any way you can imagine so get creative and put your own spin on it.  Enjoy!
