Blueberry Smoothie Popsicles

Nice weather is finally here in Upstate NY and it's actually quite warm...less than a month ago it was snowing, now it's in the high 80s and setting new records for the high temps.  Dunno.  But I'm sure not complaining.  So it's perfect to have an icy treat to cool off with, and I think I concocted one that's a winner.






I threw this prototype together and didn't write down a recipe.  It's a keeper, so next time I make it, the recipe will be recorded and shared here!  I'm going to try substituting the sugar with dates for the sweetness next time.

Ingredients:

about 1 cup frozen blueberries
1 banana
handful of fresh spinach (Yep, spinach.  Trust me on this one.)
Almond or other nondairy milk--start with about 1/2 cup and work from there
Dash of organic sugar

Put the blueberries, banana, spinach and sugar in a blender and add nondairy milk a little at a time till a thin smoothie consistency is achieved.  Pour into molds and freeze.

So what's up with putting spinach in these?  Spinach is one of the sneaky vegetables that don't impart taste when added in small amounts to smoothies.  So you can sneak it right past kids and anyone who thinks spinach belongs with Popeye and not in a shake.
